Carnival, which comes from the Latin for “goodbye, meat,” is the period between Epiphany and Ash Wednesday. The final day is known by the French term, “Mardi Gras,” or “Fat Tuesday.” This whole period is marked by parades and parties, and it was first celebrated in the Americas in 1600. But New Orleans isn’t where the regular, and typical, American festivities originated.
